Cretan Syglino

Lightly smoked, very tender and in need of very little cooking, syglino is what the modern consumer is asking for. It is sold sliced, which makes it easier to cook and gives a better-looking result on the plate. Salads, pizza and pasta dishes all take it well, and it also works as a cold meat at breakfast.

The pork is first cooked until much of its fat is drawn off, then smoked over beech wood with aromatic herbs such as thyme and sage. It is made in an entirely natural way throughout, and contains no gluten and no colourings.
