Smoked Cretan Pork

Apaki refers to a special taste that results from herbs that can be found in the mountains of Crete. It is made from 100% lean pork tenderloin and it does not contains gluten, preservatives or other chemical additives. What makes Apaki stand out is that it is naturally smoked in beech wood, has a rich taste and it is the only one of its kind to be sliced. During its preparation, it remains for 2-3 days in high quality Cretan wine vinegar which gives it a particularly delicate taste. Then it is hung in a special oven, where it is smoked with special aromatic herbs such as sage, thyme and oregano, giving it a special taste.
